Acrylamid in Foodstuffs

Acrylamid can under certain conditions appear during the production and preparation of food containing carbohydrates, such as pototoes or wheat from natural food.

Acrylamid is known as a carcinogenic substance and the amounts in food should be as low as possible.

The Sofia GmbH determines Acrylamid in food by means of LC-MS/MS (see Deutsche Lebensmittelrundschau 12/2002) as well as with GC-MS/MS after derivatisation (method according to EPA 8032 A, bromination).
